Daddy's Favorite Chop Meat Sauce

A hearty meat sauce by Valerie, simmered low and slow with beef, garlic, onion, crushed tomatoes, and fresh basil. Great served over cheese ravioli, cavatelli, or rigatoni.

Ingredients
- 1½ poundschop meat, beef
- 1large onion · chopped fine
- 1head garlic · chopped fine
- 1 Tbsporegano
- 6 or morefresh basil leaves
- 2 28-ounce canscrushed tomatoes
- 1 canwater
- salt and pepper · to taste
- olive oil
Method

Brown the chop meat in olive oil with the onions and garlic until the meat is nicely brown and onions and garlic are soft.

Add the cans of crushed tomatoes and can of water, and the oregano, basil, salt and pepper.

Simmer for 2 hours, stirring occasionally.

This sauce is good served on cheese ravioli or cavatelli or rigatoni.
